Cooking Principles
- Use cold rice: Day-old refrigerated rice separates more easily and gives better texture in the pan.
- Cook each component separately: Cooking eggs, onions, and meatballs separately before combining gives each its optimal texture and flavor.

Cooking Steps
- Heat up a large cooking pan or wok for a few minutes.
- Add olive oil and spread evenly. Pour in the beaten eggs and stir until they turn golden. Set aside in a bowl.
- Add the chopped onion to the pan and stir until golden. Set aside.
- Add the sliced meatball pieces to the pan. Spread evenly and stir until golden.
- Add in the cooked rice, eggs, and onion. Stir until mixed well and heated through.
- Turn off the heat. Add the cilantro or green onion for garnish. Season with salt and pepper to taste.
- Serve immediately.
Tips & Notes
- Rice that has been cooked and refrigerated overnight (or up to 3 days) makes better fried rice. Before using, break up any large clumps with a spoon.
