Cooking Principles

  • Soak for speed: Soaking 6–8 hours reduces cook time from 35–40 min (unsoaked) to 15–20 min.
  • Natural release: Allow 10 minutes of natural pressure release before quick releasing for better texture.

Cooking Steps

  1. Rinse and soak: Rinse the chickpeas thoroughly. If you have time, soak them in water for 6–8 hours or overnight. This step is optional but helps reduce cooking time and improves texture.
  2. Add to Instant Pot: Drain the chickpeas (if soaked) and add them to the Instant Pot. Pour in 3 cups of water and add salt if desired.
  3. Set the cooking mode: Close the lid and set the valve to “Sealing.” Cook on High Pressure for:
    • Soaked chickpeas: 15–20 minutes
    • Unsoaked chickpeas: 35–40 minutes
  4. Release pressure: Once the cooking cycle is complete, let the pressure release naturally for about 10 minutes, then carefully do a quick release.
  5. Drain and use: Drain the chickpeas — they’re ready to use in your favorite dishes like salads, hummus, or curries.
