Cooking Steps

  1. Whisk: Beat 2 eggs with 1 cup of warm water. Sift through a sieve (or skim with a spoon) to remove foam. Pour into a 15 cm / 6-inch porcelain bowl or dish.
  2. Set up Instant Pot: Place a trivet in the pot. Add 1 cup of water. Set the bowl of egg mixture on the trivet. Cover the bowl with foil.
  3. Pressure cook: Close the lid and turn the steam release handle to "Sealing." Press "Steam" and set to low pressure for 10 minutes.
  4. Release pressure: Natural release for 10 minutes. Press "Cancel," then turn the handle to "Venting." Once the valve drops, open the lid.
  5. Serve: Carefully remove the bowl. Drizzle with light soy sauce and sesame oil. Garnish with chopped scallion and serve immediately.
